Banana oat muffins or cake

Nourishing alternative to many shop-bought snacks and breakfast pastries, made with simple ingredients, naturally sweetened and rich in protein and fibre while avoiding excess sugar and additives, a great option for children’s (and adults!) snacks, breakfast or lunchboxes.

For 10-12 muffins:

Ingredients

  • 1 cup of Greek yogurt

  • 1 cup of organic (gluten free - optional) oats

  • 2 eggs

  • 2 bananas

  • 1 tsp of baking powder

  • Toppings: use either blueberries, raspberries, dark chocolate chips or small apple pieces.

Blend all ingredients (except the toppings) in your blender (high speed) until smooth, pour the mixture into a muffin tray. If you don’t have a muffin tray, you can use a loaf tin instead, simply adjust the cooking time accordingly !

Add your chosen toppings and bake for 15 min for muffins, or 20-25 min if making a loaf cake !

Leave to cool for 15 min before serving.
